Clock Worked Perfect using DS3231_TEST library and notes from: http://misclab.umeoce.maine.edu/boss/Arduino/bensguides/DS3231_Arduino_Clock_Instructions.pdf

Basically my problem was: I set the time and date, disconnect the power, the time and date was not kept in memory, it default to the time and date I ran the sketch.
