The Chiquita Fat Replacement System consists of dehydrated banana flakes and cellulose gum and gel. It can serve as a 100% and 50% substitute for fat and sugar, respectively, in baked products without any adverse effects on their texture and taste. The banana flavor is eliminated upon hydration and baking.
