ELEGANT HOME GOURMET

This cookbook is based on recipes which are a blend of Caribbean-American cuisine. I have simplified the process so that you too can create elegant gourmet recipes right in the comfort of your own home, and dazzle your family and friends taking them on an amazing culinary adventure. I grew up in a family with a tradition of cooking together and sharing extraordinary food that was always prepared with love. I started cooking at the early age of twelve. I observed my Mummy cooking for us, and started helping out in our kitchen so that I could learn these culinary treasures that I hoped to someday make my own. I have never been classically trained. My main training has come from mere obeservation of great chefs and cooks and sampling their food. Growing up in Trinidad & Tobago has given me a unique perspective and my cooking is greatly influenced by my cultural heritage which is East Indian and Spanish, as well as the cosmoplitan cuisine that is illustrative of the Caribbean islands. I have been an American citizen for many years and I have blended my heritage with great American cuisine to create a new spin on my dishes. I am so grateful to my parents for their inspiration and the influence they have had on my cooking. My Daddy would always say that we had to cook enough food, because we never would know when family or friends would show up at our door. And sure enough, someone would always come knocking and we would always have enough to share. Today, I carry on the same tradition and never miss an opportunity to share my cooking with my friends and family. I hope that you will enjoy these recipes as much as I have enjoyed creating them and sharing them with you.
