Many years prior to being diagnosed, my niece was displaying several symptoms and the major one was a failure to gain weight. Unfortunately, the remedy proposed to counteract this problem at the time was to increase her intake of any foods that would help bulk her out and her mum was encouraged to feed her plenty of pizza, bread, cake and biscuits. I can actually hear many of you gasping in horror. Well, as was to be expected, the failure to gain weight did not dissipate and many other symptoms increased. Blood tests were taken together with a small intestine biopsy and celiac disease was diagnosed. Once the gluten free diet was introduced the changes to my niece's health, energy and growth were seen in a surprisingly short period of time.
This book does contain some good basic information for the newly diagnosed but as with any medical condition it is always recommended that you consult the experts, the physicians and dieticians who are in the know.
My purpose for putting these books together is because after talking to many mums and dads who have children with this condition there were several topics that were always at the top of their 'Wish Lists' and I wanted to help out by providing some suggestions and answers to these topics.
Most of these parents were already clued up on the causes, symptoms and resulting effects of Celiac disease and also knew what they had to do to reverse these effects so I asked them what Top Five Topics they would most like to see clearly covered in a book without having to root through chapters of information that they already knew about.
They wanted:
1. To know what constitutes gluten free flour and more recipes for things they can no longer have like bread, biscuits, cakes, pizza and pancakes.
2. Tips and suggestions on how to keep the expenses to a budget when buying gluten free foods
3. A shopping list of must have pantry items so they don't get caught on the hop.
4. Ideas and suggestions for dealing with meals away from the family home.
5. To know which Gluten Gremlins to look out for that are often hidden in food and other everyday products, often labelled with unfamiliar names
These topics are covered in this, my first book in this series. Further recipes designed specifically with children in mind are to be found in my other cook books, available as part of this "Celiac Disease In Children: A Practical Guide For Parents" series of five books.
