Bringing raw foods to the Italian dinner table is as natural as an antipasto plate, the traditional first course of any formal Italian dinner. These colorful trays full of small bites of olives, mushrooms, artichoke hearts and other fresh vegetables are served on common plates and meant to create a relaxed, friendly, communal feeling to the meal. In this Italian cooking e-book we are merely extending the tradition and making the whole meal raw. Given the heavy use of tomatoes, red peppers, olive oil and garlic in Italian cuisine, we don’t have to make that great of a gastronomical leap.
