BBQ Chicken with Tangy Marinade
One of the best delicious, and healthy chicken dishes! And remember Chicken is budget friendly. This grilled chicken is super moist. Enjoy with baby spinach leaves.

Cooking Time: 3 hours
Ready In: 25 minutes
Ingredients:
For BBQ Rub:
1 tablespoon dry mustard
2 teaspoons celery seeds
1 teaspoon ground cumin
1 teaspoon ground coriander
2 teaspoons dried thyme, crushed
2 teaspoons garlic powder
1 tablespoon salt
4 tablespoons cayenne pepper
½ teaspoon paprika, crushed
For Marinade:
2 pounds grass fed chicken thighs and legs, trimmed of fats
4 garlic cloves, crushed
2 tablespoons balsamic vinegar
2 tablespoons fresh lemon juice
¼ cup olive oil
Salt and black pepper, to taste
2 tablespoons BBQ rub
Directions:
1. In a bowl, add all BBQ rub ingredients and mix well. Keep aside.
2. In a large bowl, add chicken and all marinade ingredients and toss to coat well.
3. Cover and refrigerate overnight at least.
4. Preheat the grill to low. Grease the grill grate.
5. Remove the chicken from refrigerator.
6. Remove chicken from marinade and keep in room temperature for 5 minutes.
7. Sprinkle extra BBQ rub generously on all sides.
8. Place chicken on grill. Cover and cook for about 2 to 3 hours, flipping occasionally.
