We all try to eat more plant based foods for our health. Eating a plant based diet can be hard on the budget. The recipes are designed for taste but also to keep your grocery budget in check. When meat is used, meat is not the primary ingredient. Using less meat and more plant foods in meals will help your family adapt to the taste.

You can use home cooked beans or canned beans in the recipes. I usually keep cooked beans on hand but I also stock my pantry with canned beans. If you do not keep rice cooked on hand, try instant brown rice. I use instant brown rice often in the recipes.

My family loves french fries. Since I started making french fries in the air fryer, we eat them more often. Included are numerous recipes for topping or seasoning your french fries.

Beans and vegetables make great enchiladas, tacos and burritos. I don't always have enchilada sauce on hand so I have included a homemade recipe. It has been a journey to get my family to eat more plant based foods and less meat without feeling deprived. By cooking our favorite foods and adding more beans, rice and vegetables to the dish and less meat, they do not feel deprived.
