The technological processes involved in the production of edible and non-edible fats are outlined and information is provided on the utilization of fats derived from essentially non-fatty raw materials such as bones, wool and cellulose. The authors also discuss the chemical composition, properties and usage of by-products from other industries. Waste materials formed in the fat industry are classified into three sections - fumes, sewage, and solid wastes - and ways of protecting the environment from the effects of those waste materials, including mechanical, chemical, physicochemical and biological methods, are discussed in detail.

Well-illustrated with flow charts, tables and diagrams, the book also contains an extensive bibliography.

Henryk Niewiadomski (1905-1992) was Professor Emeritus at the Technical University of Gdansk, Poland. He was awarded the French Chevreul Medal in 1967, and the Copernicus Medal of the Polish Academy of Sciences for his outstanding scientific achievements in 1985.

Professor Hanna Szczepanska (1930-1989) wrote over 100 scientific papers and was the author of two books.
