My parents moved from West Virginia before I was born so what that meant was I spent all my summer vacations visiting my Grandparents, aunts, uncles and cousins in West (by God) Virginia. I think it was given that name because of the fertile soil it possesses. The gardens that were created were beyond beautiful, originally gardens were what helped poor people survive but my family took it to a different art form. You can t imagine how large the plants grew and how tasty the vegetables were. It was from these gardens that a number of these recipes were born. Tomatoes, Peppers, Zucchini, Cucumbers, you will recognize this in the recipes. Herbs like Basil, Rosemary, Parsley, Oregano, were abundant. Like I said earlier, we monetarily were poor but rich in imagination and culinary skills.
