Probiotic bacteria (Probiotics) have been gaining increasing interest in recent research. This manuscript presents some details about the Sudanese traditional dairy products, uses, microbiota present & research conducted. Conventional methods of bacterial identification were used and molecular techniques were also included. Several tests for characterization of Lactic Acid Bacteria as probitics were described.
