From the supplier: The Dept of Agriculture's Southern Regional Research Center in New Orleans, LA, may yet prove that rice is a valuable nutraceutical, fat replacer and non-allergenic vegetable protein. Its research on Ricemic, a slow-digesting rice starch, offers possibilities for new product applications, such as those that prevent blood-sugar drops in diabetics and provide runners with a steady fuel supply. Ricemic is formed by purifying; separating out the proteins; and heat- and enzyme-treating economical rice flour. The process also yields rice protein concentrate as a by-product.
