Dieser Ausdruck stammt von dem Verhalten, welches der Rohrzucker hierbei zeigt; ein Molekul des rechtsdrehenden Rohrzuckers zertit namlich bei solcher Spaltung in ein Molekul Dextrose und ein Molekul Lavulose das entstehende Gemisch ist dann linksdrehend, weil Lavulose starker links als Dextrose rechts dreht. Ein Molekul Milch zucker (lactose) zerfallt in ein Molekul Dextrose und ein Molekul Galaktose; Maltose in zwei Molekule Dextrose.
