Emerging Challenges in Food Safety in Southern Nigeria: A Close Microbiological Study on Abattoirs, Raw and Ready to Eat Beef, Fish and Poultry in Benin City

This book x-rays the food safety condition of raw and ready-to-eat (RTE) beef, fish, and poultry in a major city in southern Nigeria with the view to compare it with standard microbiological benchmarks available worldwide. It also focuses on the microbiological quality of some abattoirs. In addition antibiotics sensitivity profile was determined for organisms detected. Recommendations for improvement to reduce microbial load especially on RTE food are also outlined.
