Sustainable food production to feed the ever-increasing human population is a critical issue today. It is true that the result of high rate of population growth and serious land degradation, countries like Ethiopia cannot feed its population at present and it will have difficulties doing so in the near future. In Ethiopia, low soil fertility is one of the factors limiting the productivity of crops, including potato. Food self-sufficiency in real concept must consider nutritional as well as economic security that could be addressed through integrated soil management development which is friendly and low cost input in a given ecology like Organic Phosphate. In the context of the above issue, root and tuber crops such as potato could play an important role in highly populated areas using organic fertilizers has to be given priority of the country.
