Ingredients:
- 1 ½ cups cooked quinoa
- 1 teaspoon plain butter
- ½ cup chopped celery
- ¼ cup chopped white onion
- 1/3 cup shredded carrots
- 1 tablespoon chopped chives, fresh
- 1 egg
- 1 egg yolk
- 2 tablespoons olive oil
- 1/3 cup toasted sliced almonds
- 2 garlic cloves, minced
- 1 cup almond meal
- Fresh ground salt and pepper
For the dressing:
- 1 tablespoon lemon juice
- 2 teaspoons cornstarch
- 1 teaspoon sugar
- ¾ cup orange juice
- 1 teaspoon grated lemon zest
- 2 tablespoons currants
- 2 teaspoons chives, chopped
Directions:
1. Melt the butter in a large skillet; add veggies and cook until tender.
2. Mix quinoa, almonds, almond meal, chives, egg yolk and egg; season with salt and pepper and stir to combine.
3. Shape 8 patties, ½-inch thick and arrange onto baking sheet lined with parchment paper; set in the refrigerator for 1 hour.
4. Meanwhile, prepare the sauce; combine all ingredients and place in a small sauce pan; bring to boil and immediately remove from the heat.
5. Heat olive oil in large skillet and cook patties for 8 minutes, turning once, until golden brown.
6. Serve while still hot with citrus sauce.
