It derives from a Late Latin word that means 'enlivening and quickening' and is related to the word 'vigor.'
These days, a vegetable refers to plants you can eat and everyone will tell you about their favorite vegetable. Admittedly, the definition is culturally-bound. In Brazil, they call an avocado a fruit because they serve it with sugar. Here in the US, we slice it up in salads and sandwiches, so we call it a vegetable. Even this definition is controversial. In 1893, the Supreme Court weighed in on whether or not a tomato is a vegetable as opposed to a fruit. They came down on the side of 'vegetable.'
