Before I was diagnosed with coeliac disease I had no idea what this even meant. Having entertained friends for many years, and even completed a gourmet cooking course at TAFE in the UK, I found the new world of Gluten Free cooking, especially entertaining, a daunting one, which it has taken me years to successfully ensure there is no noticeable difference in flavours to my guests when we entertain.
