Kashmiri fruity rice
This sweetness comes from the Kashmir valley where the weather is so divine, it makes everything sublime. The freshness of fruits clocked together with cinnamon, cardamom, cloves and rice not only nourishes your inside but brings a smile on the outside. Kids, loves this!
Preparation time -20 minutes.
Cooking time -20 minutes.
Serves 2
What goes in
1 cup steamed white/brown rice.
½ tablespoon Olive oil.
2 cloves.
1 pinky finger sized cinnamon stick.
½ dry bay leaf.
½ cup, mixed fresh fruits cubes – apple, orange, pears, guava, pineapple etc.
1 tablespoon chopped mixed nuts – walnuts, cashew nuts, almonds etc.
1 tablespoon rose water.
½ teaspoon sugar.
½ tablespoon fresh cream.
1 tablespoon milk.
Salt to taste.
Method
Heat the oil in a pan and add cloves, cinnamon, cardamom and bay leaf to it and sauté it for a few seconds.
Then add the fruits and sauté it for another minute or two.
Add everything else to it and mix it really well without harming the fruits.
Cook for another 3-4 minutes.
Serve hot.
What goes with it
Goes best alone or you could play with some spicy chutney or sauce.
