A combination of herbs and aged cheese makes for a light, savory roll that is the perfect accompaniment to any meal, soup, or stew. You can replace the Parmesan with another hard or soft cheese such as Pecorino or cheddar, or try adding pesto, garlic, chives, and other herbs to create your favorite mix.

1. Preheat your oven to 425°F (220°C, or gas mark 7). 2. Add all the ingredients to a bowl and whisk until fully blended and a bit bubbly. The batter will have a liquid consistency. 3. Fill muffin liners or nonstick popover sleeves one-half to two-thirds of the way with batter. 4. Bake for about 15 minutes, or until they begin to brown on top, keeping the oven door closed to prevent them from collapsing. 5. Cool for a moment and serve. These are best served soon after they come out of the oven but can be kept covered and warm for a while as well. Yield: 6 popovers.
