From the supplier: Modified-atmosphere packaging (MAP) is being used increasingly for food products to extend shelf life. In addition, this type of packaging has made it possible to bring fragile and perishable foods such as fresh pasta to market. MAP entails removing the air from packages; refilling them with a gas, such as nitrogen, carbon dioxide or oxygen; and resealing the packages. Customers do not fully understand the technology, and often do not even recognize it.
