NDM and WPC can be used in a wide range of food products as a source of protein, fat and other nutritional components. Removing the water that comprises 90% of raw milk allows the powder result to be shipped more easily and at a lower cost. The cost savings are similar when the water that makes up 93% of fluid whey is removed. Both NDM and WPC can be produced by removing the water through evaporation or drying.
