From the supplier: D-tagatose is a physiologically non-caloric sweetener discovered in 1986. Its patent holder, Biospherics Inc. and MD Foods of Denmark have entered into a joint venture to commercialize it. D-tagatose is derived from whey and its molecular structure is similar to fructose with one inverted carbon bond. It is about 92% as sweet as sugar and has the physical properties and functions of sucrose.
